Mugolio

Mugolio

Mugolio is traditionally an Italian syrup made by packing fresh pinecones and spruce tips i brown sugar or turbindo. It sits for at least 3 months and is then strained and heated before bottling. Depending on the species of the cone or tip you use, the flavor varies. The most interesting, in my opinion, is the mugilio made from Pinus rigida or pitch pine. It's almost fruity like strawberry.

Mugolio can be used the way any syrup is used. You can cook with it, top pancakes or ice cream, and even make cookies.
